CANDY APPLE RECIPE

Everyone loves Candy Apples and they are making a huge come back at parties and events.

I’m not only going to share my recipe for candy apples, but I’m going to show you how to prepare your apples, dry your apples and how to create the perfect candy apple syrup for dipping the apples.

Snow White Theme Birthday Cake and Candy Apples

Recently I was asked to create a specialty cake for a little girl’s Snow White theme birthday. In addition to creating a super fun cake, I got the opportunity to make candy apples.

I haven’t made candy apples in a long time. But I came to find out that there is a HUGE trend with candy apples these days.

Candy apples can be made with a perfectly shiny sugar coating or they can be dipped in chocolate.

My customer requested bright red candy apples like the one Snow White bit into.

I sure learned a lot making candy apples and I’m going to share a few tips with you so you can make perfect candy apples too.

Prepping Apples

When making candy apples you want to plan ahead a little. The reason is because apples have to be prepped before dipping.

Apples typically have a wax coating on the outside to make them look appealing in the market. But you want to remove the wax before you dip the apples or the sugar will not stick well to the apple.

To prepare the apples, you’ll need a pot of boiling water. Dunk your apples in the water (a few at a time) for no more than a minute and you’ll notice the wax starts to melt off.

Quickly take your apples out of the water with a slotted spoon and set on a tray with paper towels and allow to cool off.

Apple Drying Time

Allow your apples to sit on a tray at room temperature for a good 24 hours. You may notice that little tiny bubbles come to the surface of the apples. Wipe those bubbles off the apple with a dry paper towel.

Notice the tiny little bubbles on the apple in this photo. That is moisture that comes out after the wax is removed.

Apples have tiny pores in the skin that will release moisture after you’ve dunked them in hot water to remove the wax. Giving the apples 24 hours will allow that moisture to escape.

Insert candy apple sticks into the top of each apple. Using a paper towel, rub your apples all over and make sure there is no moisture at all around the stick area.

Boiling Sugar

Ok, let me start by warning you the sugar you are about to boil is like hot molten lava!

BE CAREFUL!! DO NOT GET HOT SUGAR ON YOU or you will be headed to the emergency room.

Candy Apple Recipe

Materials

  • 6-8 Apples
  • 6 cups White granulated sugar
  • 1 cup Light Corn Syrup
  • 2 cups Water
  • 2 tbsp Red Gel Food Color I recommend Americolor Red
  • 3 drops LorAnn Oil flavoring optional
  • Cookie tray
  • Slotted spoon
  • Paper towels
  • Candy thermometer
  • Wooden spoon (do not use metal)
  • Pastry brush
  • Non Stick spray
  • Silicone mat

Instructions

  • Combine water, sugar and corn syrup in heavy pot
  • Turn heat on medium high
  • Dip your pastry brush in water and wipe down inside of pot to ensure no sugar is on the sides or the sugar can crystalize.
  • Insert your candy thermometer into the mixture.
  • As the sugar cooks, the water will evaporate and the mixture will thicken as the sugar turns to syrup. DO NOT MIX. If you do, you can risk crystals appearing in your mixture.
  • Once the candy thermometer reaches 302°, carefully add in your color and flavor. DO NOT MIX, gently swirl your pot around so the color is evenly distributed. Let the bubbles do the work and continue mixing in the color as the mixture continues to boil.
  • Remove the pot from the heat.
  • Begin dipping your apples in the sugar syrup being careful not to get any on you.
  • When you have covered your apple completely, set it aside on your tray that has been sprayed with non-stick spray. If you have a silicone mat, you can omit the non-stick spray.
  • Let the apples cool off completely and the sugar will solidify.
  • Hold the apples by the stick only to avoid getting finger prints on the shiny coating.

Although this recipe may seem a little intimating, don’t be afraid to make candy apples.  This is a classic recipe and it’s sure to please both kids and adults.

If you are a little hesitant to make candy apples with sugar syrup, consider making them with chocolate instead.

Candy apples can be made similar to the steps above, however, you can simply melt chocolate and dip your apples that way.  After dipping your candy apples in chocolate, you can also decorate with sprinkles and other fun toppings.
